Autumn Kale & Persimmon Salad Recipe

When I got an email from my boot camper, Karen Turner of KT Food Groove, that she had made this yummy salad and just wanted to share the recipe, I immediately asked if I could share with YOU! Because well, DUDE, just look at these mouthwatering pictures and scroll through the ingredients! Autumn Kale Salad



Salad Ingredients:
1 package of trader joes Organic Lacinto Kale (it’s already washed and chopped)
1 tbs good olive oil
1/2 tbs apple cider vinegar
Pinch of good salt
1 persimmon chopped (in season now and so delicious)
1/2 green apple chopped
Handful of pomegranate seeds
Handful dried cranberries
Parmesean shavings (if desired)

1 tbs olive oil
Pinch of good salt
Juice of 1 large lemon
1 tsp of agave or honey (to taste)

Note: you can add any kind of toasted nut for extra flavor. For example, toasted pine nuts are very good in this salad.

Empty package of kale in large bowl. Pour on the olive oil and apple cider vinegar and salt. Massage into leaves and let stand about 30 minutes to let leaves become tender. Then top with all the rest of the ingredients including dressing. Enjoy!
