No Mayo Curried Sweet Potato & Chia Seed Tuna Salad

INGREDIENTS

1 Can Tuna in Olive Oil *Do not drain 1/4 Cup Crushed Curry Cashews 1/3 – 1/2 Mashed Cold Baked Sweet Potato 2 Tbs Chia Seeds Dash of Curry Powder Dash of Salt

DIRECTIONS Mix all of the ingredients evenly in bowl. Transfer into a clean and pretty dish. Top with 1/4 of medium avocado and a sprinkle of salt. Makes two servings.

 

TIME 5 mins with clean up!

CALORIES About 375 per serving. Low carb, high protein, high heart healthy plant based fats!

Blueberry Orange Mini Loaves – No Muffin Top Included

I LOVE muffins.

I do NOT love muffin tops (hence why I have a whole muffin buster exercise series). I mean really, who likes that jigg that hangs over your skinny jeans? Nobody!

Which is why I’m all about KT Food Grooves latest baked goods creation. I get the grainy texture (thanks to the yellow corn meal), and sweetness (compliments of fresh farmers market blueberries) of a muffin, without the threat of a muffin top! Karen uses clean, organic, and real ingredients to bring her blueberry orange loaves to life. I love that she uses fine olive oil, good quality honey, grated orange rind, and a flax egg in her recipe. I really believe in using the best ingredients you can find and can afford. Good For You Chocolate Chip Cookies

I have a deep love for really two things 1. Being healthy and 2. Yummy treats.

Yup. That pretty much covers it.

Once again my favorite healthy dessert queen, Karen Turner from KT Food Groove, whips up the most delish chocolate chip cookies you’ve ever tasted. The best part is that these little bites of perfection have ingredients that are actually good for you. Good for you or not, like with anything, eat these cookies in moderation.

My tips for having cookies in the house and staying slim.

Set a daily limit for yourself, and write it on the fridge, cookie container, or Facebook. Just prepare the dough, divide into portions, and freeze it. Then take out just what you need. Become everyones favorite person and make a batch, keep a few cookies for yourself, and give away the rest. Get clever and just make half of the batch. Or even a quarter. Your butt will stay tight and you will sharpen your math skills too!

Gluten Free RED VELVET CUPCAKES

Preheat oven to 350 degrees and prepare a muffin tin with cupcake liners.

½ cup grated fresh beets 1/3 cup raspberries 1 TBS white vinegar 2 TBS lemon juice ½ cup almond milk (with 1 TBS apple cider vinegar mixed in)

Healthy Kale Salad Recipe

KALE, KALE, KALE!! How many times do you hear/see the world kale a day? Have you had it? Even if you eat it daily or have never reaped the benefits of this popular super food, you’ll love this healthy kale salad recipe. Eat up ; )

Ingredients & Directions (makes 2-3 servings)

3-4 bunches of organic kale (about 8 oz) 2.5 tbs olive oil- remember good fats are GOOD and essential for you! 1/4 cup rice wine vinegar 1 tbs sesame oil (secret ingredient!) 1 tsp sugar (or use sweetener of choice) 2 tbs toasted sesame seeds 1/2 tsp sea salt 1/2 tsp freshly ground pepper

1. Toss all the ingredients together and let sit for about 30 mins so the flavors can savor each other. So easy and you can make this a day ahead too. Serve when ready! This will hold for about 2 days in the fridge.

Super Food Kale Omelette Recipe

Ingredients & directions (makes 1 omelette)

4 organic eggs, or 1/2 cup of organic egg whites 1 bunch of kale, pre-steamed 1/2 cup tomatoes, cherry, grape, or diced tomatoes 2 scallions, chopped 1 tbs olive oil salt and pepper to taste Hot sauce (optional) but a must for me!

1. Mix eggs, pre-steamed kale, tomatoes, scallions, and salt and pepper in a large bowl; whisk together. 2. Coat pan with olive oil and pour in egg mixture. Cook 2 mins and then flip over to make an omelette. 3. Put on a plate and drizzle with olive oil and hot sauce to finish.

Great for that afternoon pick me up or makes for a “sassy” snack or dessert anytime too. Talk about EASY! All you need to do is purchase a bag of dehydrated oranges (or make your own if you have a dehydrator) and then melt your favorite chocolate (go for dark) and you have a treat that will not destroy any of your efforts.

Buy a bag of dehydrated oranges from the Farmer’s Market, Trader Joes or any health foods (organic of course). I recommend using a dark chocolate, 70% or higher, providing higher antioxidants and I also like the flavor too. So you just melt, dip, let sit, and indulge away. I do consider this still to be a healthy snack or treat, but again in MODERATION.  Enjoy!
